SERVINGS

Makes 12 Tacos Serving Size: 2 Tacos

INGREDIENTS

SHELL

  • 9 cups chedder cheese (recommended 3/4 cup per shell)

Filling

  • 1 lb Jennie-O Lean Ground Turkey (or ground beef)
  • 1/2 packet Taco Seasonings
  • 2/3 cup water

Toppings

  • 1/2 cup sour cream
  • 2 cups shredded lettuce
  • 1 cup shredded cheese
  • 1/2 cup salsa

DIRECTIONS

STEP 1: Preheat oven to 350 degrees.

STEP 2: Spread 3/4 cup shredded cheese into circle on greased cooking sheet. Cook shells 5-10 minutes, until edges start to brown.

STEP 3: Remove taco shells from oven, let cool a minute, then use spatula to gently remove shell from cooking sheet. Place for a minute on paper towels to soak up unnecessary grease. Drape taco shells over kitchen utensil handles (Start taco fillings while shells are drying).

STEP 4: Brown the ground turkey as per directions on package. Mix in taco seasonings and water, heat to boil. Let simmer 3-4 minutes.

STEP 5: Dish taco filling into dried taco shells and top with desired toppings.

STEP 6 It's now time for TACO TUESDAY!

INGREDIENTS

CRUST

  • 3 eggs whites
  • 1 cups shredded mozzarella

Topping

  • ¼ cup pizza sauce (make sure to keep as low carb as possible)
  • 1 tsp. dried oregano
  • 1 cup shredded chedder cheese
  • ¼ cup mini pepperonis

Dipping Drizzle Sauce

  • ½ cup butter
  • 1 tsp. garlic powder
  • ⅛ tsp. dried oregano

DIRECTIONS

STEP 1: Preheat oven to 400 degrees.

STEP 2: Beat the eggs. Blend in the mozzarella cheese. For best results, pour mixture into greased pie pan. Bake the crust in oven for 15 minutes until the pizza crust turns golden.

STEP 3: While the pizza is in the oven make the garlic drizzle-dipping sauce: Recipe here.

STEP 4: Remove crust and let cool for a few minutes. Transfer pizza to cooking sheet. Brush or drizzle 1 Tbsp. of the garlic dipping sauce over crust.

STEP 5: Increase the oven temperature to 450 degrees.

STEP 6: Mix the pizza sauce and oregano, then ladle onto the crust. Top with the chedder cheese and mini pepperonis.

STEP 7: Place pizza back in oven and bake for another 5-10 minutes or until the crust and cheese have started to brown.

STEP 8: Remove from over and cut into 4 slices. 1 serving is 2 slices. IT'S PIZZA PIE TIME!

  • 6 oz. bacon, cooked and crumbled
  • ½ cup chopped white onion
  • ½ cup chopped green onion
  • 1 Tbsp. olive oil

STEP 2: Heat 1 Tbsp. olive oil in skillet. Add chopped onion and cook until slightly brown. Add crumbled precooked bacon.

STEP 3: In a large mixing bowl mix eggs, egg whites, half & half, flour, cheese, pepper, and salt.

STEP 4: Into the greased muffin cups divide the bacon and onions among the 12 muffin cups, then add the chopped spinach.

STEP 5: Ladle enough egg mixture into each muffin cup to fill the tin about 2/3 full.

STEP 6: Bake at 375 degrees for 15-20 minutes (depending on size of muffin tin).

STEP 7: Enjoy this quick-grab low-carb breakfast every morning!

Yes it came that fast...those days of being couped up in the house, longing for those warmer days are over. But, now that it's here, the temperatures are rising well into the 100's and you are not quite sure if this is really what you envisioned summer would be like.

2 main ingredients. infinite meals. YUP! Simplicity is key to a successful tasty healthy meal. We all get caught up on Pinterest and can't wait to try that oh so lovely looking meal, until we see it takes 1 hour to prep and needs 20 little ingredients...none of which is in our pantry.

here we'll show you how to be creative with these few ingredients, add some of your own flare (whatever else you have in the freezer or fridge). We've whipped together these dishes using these 2 staple ingredients:

STEP 1: Main Ingredients

  • Seeds of Change - Quinoa & Brown Rice w/ Garlic it's a microwavable miracle!!! 90 seconds in the microwave and you get this amazing dish, great on its own or in this case a great staple to any meal.
 
 
  • Jennie-O Italian Seasoned Ground Turkey

    conveniently preseasoned ground turkey helps you save on pre time and contains 70 percent less fat than regular ground beef. spray skillet with nonstick cooking spray. preheat skillet over medium-high heat. Add ground turkey to hot skillet. stir to crumble, approximately 14 to 16 minutes.

 
 

STEP 2: ADD SOME VEGGIES

  • PEAS - a powerhouse of nutrients. also a great protien subsitute for vegetarians instead of the turkey. great for weight management, high in vitamin C, vitamin E, antioxidant mineral zinc, & helps regulate blood sugar. buy frozen or fresh.
  • BELL PEPPERS - great source of vitamin C, vitamin E & B6. red bell peppers contain several phytochemicals and carotenoids, particularly beta-carotene, which lavish you with antioxidant and anti-inflammatory benefits. cook on low heat for a short period and lock in that sweet flavor. buy fresh.
  • BLACK BEANS - crazy high in fiber & protien. also a great protien substitute for vegetarians instead of the turkey. rich in vitamin A, calcium, iron, and manganese. buy canned black beans (lots of flavors available).
  • GREEN BEANS - High in fiber & folic acid, great source of vitamins like A, C, K, & B6. buy canned or fresh.
  • COOKED KALE - High in fiber, iron, & calcium. great source of vitamins like A, C, & K.

Tamolitch Falls / Blue Pool

Okay so yes, the term Wet + Wild usually has an entirely different meaning...here at DRAEKK we aim to change that meaning. Join us for our Wednesday blogs where we'll show you where you can get outdoors, near water (or even in it) and get some well-deserved exercise.

So get your head out of the gutter and lets begin!

Ever find yourself looking at other people’s social media, or professional photos of these awe-inspired places, places that you think must be photoshopped... Well join us each Wednesday where we'll show you were these little gems are hidden, some may even be right in your own backyard! But here’s the catch...you have to go walk, run, hike, even bike to get there. The best part...you have to go outside!

Imagine you are running down the trail (or walking) and you come across a turn and this is what you see . .

Tamolitch Falls / Blue Pool

The word BLUE just doesn't do this magical pool justice. BLUE can't begin to tell the story of this breathtaking, translucent water, with a rather constant temperature of 37 degrees.

The Tamolitch Falls (or most of the year known as the Blue Pool) is an odd phenomenon. This is the last of a grouping of three falls on the McKenzie River. All three falls were formed during lava flow (the 1st two falls were formed 3000 years ago and the last was 1500 years ago. The first fall Sahalie Falls stands at 120ft.

The second fall Koosah Fall actually looks more profound even at a shorter 90ft tall.

And last but obviously not least, Tamolitch Falls, aka Blue Pool, only has a water fall during high rain season (or after a good snow melt in the late spring / early summer). The McKenzie River goes underground for three miles after the 2nd fall before emerging from the volcanic rock here at the Tamolitch Falls. The water here gets it's translucent topaz color because it has been filtered through that volcanic rock.

Want to have a little fun?

Follow the trail over the rocks above the Tamolitch Falls to a rather steep dirt trail down to the base of the pool. Word to the wise...BE CAREFUL!!! These waters are as cold as they are beautiful.


NOW HOW DO YOU GET HERE?

Now we show you the pictures, tease you with the beauty of this place, but how do you get here?

The world famous McKenzie River Trail is located in Oregon just over an hour from Eugene. Once you make it to the town of McKenzie River continue on OR-126 E for 13 miles and turn left at Trailbridge Campground (NF-730). The Tamolitch Falls trailhead will be to your right after you cross the river. This is a roundtrip easy 4 mile hike.

A more difficult 8ish mile hike starts at the Sahalie Falls. The entrance to Sahalie Falls is right off the OR-126, just feet from the roadside parking lot. It will be roughly 4 miles to the pool, where the river disappears underground before coming out at the Blue Pool again.

Are you sick and tired of the BIKINI READY Fitness Series? Where you have to already be a size 0 to even perform the workouts. Are you ready for something different, something, well lets just be honest…something that will actually work for you? Are you one of the many many people that have started a workout routine only to hurt yourself or get discouraged at your inability to do Jump Burpee for 1 minute straight?

The fundamental difference between the 24 Minute Fit exercise program and other programs is functionality and the option to choose your fitness level. Most other fitness programs are A-One-Size-Fits-All, other programs are solely geared towards the insanity group, where if you can’t already do a jump squat, roll, handstand, tuck and jump move (yes I just made that up), then you will not be able to safely perform their exercises. You will either try their exercises, hurt yourself or become too discouraged by your lack of Spartan charisma. Those same programs emphasize their philosophies “Pain is weakness leaving the body,” or “No Pain, No Gain.”

Although, I am in love with these epic motivational workout quotes and they do have their place, but, instead we encourage you to listen to your body! We aim to teach you how to be functional, how to work up to and through the different workout levels, that’s why we give you options!

LEVEL 1 / REVIVE

As the name states, this fitness level is all about the revival of your bodies original awesomeness. If you have ever questioned why you can’t jump, skip and scamper like you did when you were a kid, then this level is for you. This level emphasis the functionality of the body, if you sit for a living, have a hectic family life, and have little time to workout, we encourage you to try this level first.

If you have pain in your knees, back, neck, or literally anywhere, we help you engage and build a strong foundation. You should be able live your adult life with the resilience and agility of your childhood body.
With the Revive Level you can build up from one set of exercises (approximately 6-7 minutes up to the full 24 minutes. Life is about progress, and our 24 Minute Fit program encourages you to continue pushing past your perceived limitations. When an exercise becomes easy, move on to the next level of that specific workout!

LEVEL 2 / TONE IT

LEVEL 2 / TONE IT As the name signifies, this level will sculpt and reshape your body quickly! Here is a fun level that builds upon your foundation of epic functionality gained from the Revive level.

If you dare you can even start with this level, but be prepared to literally, well . . . Tone It. This workout level utilizes heavier weights, more advanced positions, and faster paced dynamic (more explosive) exercises. IT'S ALIVE!!!

AND A BLOG WAS BORN!

Why a blog you may ask? Well to tell the truth, I never thought I’d be writing a blog, let alone using one as a platform to launch a business, but here I am, and here it goes…

Take a second and close your eyes (after you read this paragraph of course), think back to your childhood, to when you truly believed in yourself. What life did you envision? Were you going to be a doctor, race car driver, vet, musician, cowboy, athlete, architect…who were you going to be?

Now that you’ve had that fun, yet probably depressing trip down memory lane, answer this question:

Are you doing any of those things, are you living your childhood dream?

Unless you’re one of the fortunate few, your answer is most likely NO.

We live in a society that builds up its youth, we’re told at a young age that we can do anything, be anything, if we only believe. You go through school feeling invincible, like you'll take over the world once you graduate. But come graduation day, society tells you it’s time to be realistic (a word I hate) and get a

. . . JOB.

Time passes and that job you got right out of school, that, it’s just temporary job, turned into your forever job. You stopped dreaming about your childhood aspirations and just started surviving. You started living for the weekend, and planning for retirement, because that’s when you would have time, time to do what you really wanted.

What happened, where did those goals and aspirations go? Well, frankly, you got comfortable. The money was okay, the job was easy enough, even if a little boring.

So there you have it, that’s the problem with society. Society tells you to be realistic (there’s that word again), society tells you that you’re not special, that only the GREATS can follow their dreams.

OKAY TIME OUT …wow that was depressing.

I’ll use this to segue into my true purpose for writing this … my company’s introduction.

First I will introduce myself, my name is Danielle Theodore, I’m a Systems Engineer, business owner, personal trainer, soccer player, friend, sister, daughter, girlfriend, and avid outdoorsperson … to name a few.
