12 muffins (serving size is 1 muffin)
INGREDIENTS
- 6 oz. bacon, cooked and crumbled
- ½ cup chopped white onion
- ½ cup chopped green onion
- 1 Tbsp. olive oil
- 4 eggs
- 5 egg whites
- 1 cup half & half
- 2 Tbsp. flour
- 1 cup shredded Swiss cheese
- ½ cup chopped spinach (destem)
- ½ tsp. pepper
- ½ tsp. salt
DIRECTIONS
STEP 1: Preheat oven to 375 degrees.
STEP 2: Heat 1 Tbsp. olive oil in skillet. Add chopped onion and cook until slightly brown. Add crumbled precooked bacon.
STEP 3: In a large mixing bowl mix eggs, egg whites, half & half, flour, cheese, pepper, and salt.
STEP 4: Into the greased muffin cups divide the bacon and onions among the 12 muffin cups, then add the chopped spinach.
STEP 5: Ladle enough egg mixture into each muffin cup to fill the tin about 2/3 full.
STEP 6: Bake at 375 degrees for 15-20 minutes (depending on size of muffin tin).
STEP 7: Enjoy this quick-grab low-carb breakfast every morning!
