Loaded with bacon, eggs, half & half, onions and cheese, so much flavor you won't even miss the crust! As part of our MC24 Keto Diet, we kill the carbs and embrace flavor. Weight a quiche designed to eat on a diet.....yes, you heard us right!  Without the crust this is a perfect quick grab-n-go breakfast or snack with minimal carbs.

SERVINGS

12 muffins (serving size is 1 muffin)

INGREDIENTS

  • 6 oz. bacon, cooked and crumbled
  • ½ cup chopped white onion
  • ½ cup chopped green onion
  • 1 Tbsp. olive oil
  • 4 eggs
  • 5 egg whites
  • 1 cup half & half
  • 2 Tbsp. flour
  • 1 cup shredded Swiss cheese
  • ½ cup chopped spinach (destem)
  • ½ tsp. pepper
  • ½ tsp. salt

DIRECTIONS

STEP 1: Preheat oven to 375 degrees.

STEP 2: Heat 1 Tbsp. olive oil in skillet. Add chopped onion and cook until slightly brown. Add crumbled precooked bacon.

STEP 3: In a large mixing bowl mix eggs, egg whites, half & half, flour, cheese, pepper, and salt.

STEP 4: Into the greased muffin cups divide the bacon and onions among the 12 muffin cups, then add the chopped spinach.

STEP 5: Ladle enough egg mixture into each muffin cup to fill the tin about 2/3 full.

STEP 6: Bake at 375 degrees for 15-20 minutes (depending on size of muffin tin).

STEP 7: Enjoy this quick-grab low-carb breakfast every morning!

This Guilt Free Cran-Razz is one of my absolute fav summer drinks, a mixture of two great tastes that’s berry delightful with nothing artificial. A perfect way to toast to Hump Day.

SERVINGS

INGREDIENTS

  • 12 oz. (1 can) Cran-Razz La Croix Sparkling Water
  • Dash of Rose's Sweetened Lime Juice
  • Shot of vodka
  • Garnish with fresh raspberries

DIRECTIONS

STEP 1: Pour chilled Cran-Rasspberry La Croix into glass filled with ice. Add the Rose's Sweetened Lime Juice, shot of vodka, and gently stir.

STEP 2: For added flare, add muddled respberries or whole frozen raspberries.

STEP 3: ENJOY!
